Katie's Cake
CAKE:
Preheat oven to 350 degrees
Put in a bowl:
2 cup sugar
¾ cup butter
Add:
1 ½ cup boiling water
Stir to melt butter
Sift into mixture:
2 cups of High Rock Farm Chestnut Flour
½ teaspoon salt
2 teaspoon baking soda
BLEND THOROUGHLY
Add:
6 beaten eggs
2 teaspoon vanilla
Pour into 9x13 baking pan
Bake for approximately 50 minutes
Done when knife inserted into center comes out clean
**For mini-cakes: bake 10-15 minutes ICING:
Mix:
2 tablespoons corn starch
1 cup sugar
Add:
½ cup butter
1 cup water
Heat to boiling while stirring
Add:
1 cup High Rock Farm chopped pecans
3 ½ oz shredded coconut
Spread on cake
